Louis Tikaram is the Head Chef of Stanley Restaurant in Brisbane. He’s shaking up the Brisbane dining scene, showcasing the best Queensland’s meat, seafood, and vegetables through his take on classic Cantonese dishes including Peeking Duck, Sweet and Sour Pork, Kung Pao Chicken and Lobster Lo Mein.

Who Is Louis Tikaram?
Louis Tikaram’s journey began on a picturesque farm in Mullumbimby, New South Wales. Immersed in his Fijian-Chinese heritage from a young age, Tikaram discovered the magic of his family’s culinary traditions. It was during his time in Fiji as a pre-teen that his passion for food and culture truly blossomed.
Venturing to Sydney, Tikaram embarked on his culinary apprenticeship at the renowned Longrain restaurant. Under the mentorship of Chef Martin Boetz, he honed his skills and developed a deep appreciation for Southeast Asian-inspired cuisine.

The next chapter in Tikaram’s culinary odyssey led him to the esteemed Tetsuya’s in Sydney, a culinary gem known for its exquisite dining experience. Here, Tikaram absorbed the wisdom of Japanese chefs, learning the importance of discipline and consistency in the kitchen. With opportunities to explore kitchens around the world, from Vancouver to Barcelona, Tikaram broadened his culinary horizons, infusing his dishes with diverse influences.
However, Tikaram’s career took a pivotal turn when he assumed the role of executive chef at Longrain, handpicked by his mentor, Martin Boetz. Seeking to reconnect with his roots, Tikaram returned to Brisbane and unveiled the remarkable Stanley Cantonese Restaurant at the iconic Howard Smith Wharves. There, he celebrates his Chinese heritage by reinventing classic Cantonese delicacies with a contemporary twist.
